I'm in no way qualified to diagnose this :), but perhaps you could set
your box up to panic on NMI:

And next time this happens, instead of just resetting, force a panic and
get a kernel dump? That would be helpful to someone who actually would
be qualified to look at the issue...

BTW, on newer boxes you need:

set apix:apic_panic_on_nmi = 1 

instead of:

set pcplusmp:apic_kmdb_on_nmi=1

I usually just set both to cover the bases...
