Interesting thought, I'll bet that’s what it was but I would love to hear if anyone has a definitive answer. Thank you everyone for your help!

Notice that the drive in question (ST2000NX0243) is a 4k native drive. I’ve never tried booting from such drive, could someone confirm if grub can handle it? I suspect that it might not.
