Steve,
rpc/bind is required for NFS serving.  Since many OmniOS users are
running storage servers, it would confuse them to have 'zfs set
sharenfs=on' fail to work as expected.  Users not running NFS and/or
interested in running a tighter setup may disable it as they see fit.

inetd is a bit different. We ship an empty inetd.conf file, so it's
arguable that disabling inetd in the default install will not
adversely affect anyone.  I've started
http://omnios.omniti.com/ticket.php/44 to get that done.
